Herbs #1 Coriander Leaves (Cilantro)

Apparently some people don’t like coriander (known as Cilantro in North America)! I find that hard to believe. There’s even a website for people who hate it! How could anyone possibly hate the fragrant, distinctive flavour coriander brings to so many dishes.?Though, if overdone, I suppose  maybe it can be a bit insistent at times.

Anyway, for those of us who do cherish a pot of coriander on the kitchen windowsill, here are 10 tasty ways to enjoy it:

1.Chutney Mix together: natural yoghurt, chopped coriander, lime juice, chopped garlic, salt and pepper.This makes a great chutney to put on your poppadum.

2.Layered Veggie loaf  In 3 bowls have mashed carrot, mashed parsnip, cooked and drained spinach. To each bowl add chopped coriander, salt and pepper, 1 egg and 50g soft cream cheese. Beat the contents of each bowl thoroughly, then put them in 3 layers in a lightly greased dish. Put the dish in a roasting tin half filled with hot water. Cook for an hour on Gas 4 / 180°C.

3. Light microwave eggs Mix together: 3 eggs, ¼ pint natural yoghurt, 3 tablespoons chopped coriander. Pour into 4 ramekins and microwave for 2 minutes on high. Nice as a starter or a light lunch.

4.Marinade This is a marinade for grilled chicken: yoghurt, chopped coriander leaves, ground coriander, pinch ginger, juice of half a lemon, splash of wine vinegar. Marinade the chicken for 3 hours, then grill or barbecue

5. Bulghur salad Stir these ingredients into a bowl of cooked bulghur wheat: chopped coriander, salt, black pepper, lime juice, cinnamon, garlic, chopped onion

6. SoupTo make carrot and coriander soup, cook some carrots with maybe a little potato too, then add chopped garlic and onion and a good handful of chopped coriander a litre of vegetable stock. Cook until veg are soft, then liquidise.

7.Seasoning for chops Coat pork chops with a paste made from chopped coriander leaves, ground cumin and olive oil before grilling them.

8. Curry garnish Use chopped coriander and coconut to garnish a curry. Just add it at the very last minute.

9.Salad dressing  Mix equal quantities of lime juice and olive oil with chopped coriander leaves, grated garlic, a little grated ginger root. Tastes good stirred into vegetable stir fries too.

10. Garnish anywhere any time Just use it to decorate – the leaves are so pretty.
